Simplot Hashbrowns Baskets with Egg, Chicken and Cheese

 INGREDIENTS:

1 packed refrigerated SIMPLOT hashbrowns (original)
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 tablespoon onion, grated 
1 tablespoon chopped garlic
1/2 tablespoon parsley
1 teaspoon butter, melted
3 tablespoons onions, minced
1/2 cup chicken, diced
2 tablespoons red chili, diced
6 cherry tomato 
6 eggs
2 tablespoons Leggo's Alfredo cream sauce
1/2 cup shredded cheddar cheese 
2 tablespoons olive oil 






 





  


Directions:

1 .Preheat the oven to 400 degrees.


 


 2. Spray 6 cups of a regular size muffin silicone mould with a butter-flavored 
cooking spray or olive oil.Set aside.

  
TIPS: You can use a silicone cupcake mold either with or without paper cases.





 




 

3.Cut the hashbrowns with small dice








 

 4. Meanwhile, in a small nonstick skillet, melt 1/2 teaspoon butter over medium. Add red onion,  chopped garlic. Cook, stirring occasionally, until onion is softened, about 3 minutes. Season with salt and pepper.






5.Combine the hash browns, salt, pepper, onion, cherry tomato, parsley.  
Mix the eggs, Leggo's Alfredo cream sauce and shredded cheese.

Product ingredients :Water, cream (21%) (contains milk), cheese (6%) (cream cheese, pecorino cheese), thickeners (1442, xanthan gum), onion, salt, canola oil, sugar, yeast extract, garlic, natural flavours, food acid (lactic), emulsifier (soy lecithin), herbs, spices.

  


6. Add chicken mixture (diced) and pour into hash brown cups.Add 1/2 cup of mixture to each muffin cup, pressing up the sides to top of cup.

  






7.Sprinkle with cheese.  
Bake for 25 minutes. 

  




  

8.Watch and make sure they do not burn.

9. Cool slightly, run a thin knife around the hash brown cup and gently remove from silicone mold with a rubber spatula or fork.
